Crab Cakes- The Best in the World!!

Crabcakes (the same for salmon or halibut)

Crab- at least a couple of cups for two
chopped celery, onions, peppers
dollop (extra large tablespoon) of Poupon
shake of Worchester
about 1/4 to 1/3 c. grated cheddar cheese (xtra sharp)
and a dollop of mayo or sour cream or one egg (maybe about 1/4 cup?) enough to bind it together but not sloppy. The trick is to start with less and add more if you need it, but you want them to hold together.
mix it all up and make patties
dust them in four (or Pride of the West) then egg, then Panko or breadcrumbs
saute in evoo
Top with garlic lime butter sauce or butter/lemon/capers or put them on a salad or pasta!!
